Derrumbes Durango is crafted from Cenizo (Durangesis) agave in Nombre de Dios, Durango. The production process is meticulously managed by maestro mezcalero Urial Simental, who oversees every step, from cooking the agave in underground stone pits using black oak to fermenting in underground tanks lined with pine wood and distilling in wooden stills. The result is a mezcal with a unique Derrumbes character, highlighting a region that is earning acclaim for its exceptional mezcal production.
Tasting Notes: Very well composed, it begins with sweet dark fruit flavors, before wood ash, agave pepperiness and dry minerality steadily reveal.
