This añejo tequila is crafted from blue agave, following the Fabrica de Tequilas technique where the piñas are steam-cooked in autoclaves for 10 hours.
A unique yeast is introduced to the agave juices before fermentation, and Rooster Rojo Añejo undergoes double distillation in stainless steel pot stills before being aged in oak barrels.
Finally, water filtered through Mexican silver is added to bring the tequila to a smooth 38% ABV.
